Fragrant and tender sirloin steaks

Ingredients:

2-10oz. 1 inch thick boneless top sirloin steaks (grass fed if possible)

olive oil

4 sprigs of fresh rosemary

1/2 stick butter

1 tsp. sea salt

1 tsp. black pepper

1/2 tsp. onion powder

1/2 tsp. garlic powder

2 cloves of garlic (finely chopped)

1 clove of garlic, crushed into paste

Directions:

Remove steak from fridge at least 40 minutes before cooking

Place finishing plate on the back of the stove for cooked steaks (do not touch without an oven mitt)

Combine salt, pepper, onion and garlic powder and the garlic paste in a bowl, then rub steaks liberally with olive oil

Heat cast iron skillet on high heat with 2 tablespoons of butter

Rub a tablespoon of garlic paste mixture on each side of steaks

Place in skillet for three minutes (cooked medium rare) on each side, apply another tablespoon of butter atop each steak once flipped

Place the finished steaks on the warm plate and cover with foil

Reduce heat to medium and add two tablespoons of butter and one tablespoon of water in skillet

Mix in up two cloves of chopped garlic and two rosemary sprigs and cook until rosemary is fragrant and garlic is tender

Remove from heat and unwrap steaks before placing them back into pan with mixture

Turn each steak over immediately to evenly coat both

Place each steak on their serving plates and pour remaining mixture on with rosemary and garnish with remaining sprigs
