Delicious fresh lime and avocado sausage tacos are zesty and smoky for any palette to enjoy!

Ingredients:

Budget Meal

$6 Tacos 

$1 - Box of taco shells

$1 - package of Banquette sausage links (sold in the freezer aisle | Turkey or original, but not maple flavored variety)

.40 - package of Taco seasoning

$1 - 1 Avocado

.60 - 1-2 Limes

$1 - head of lettuce or bag of shredded lettuce and cabbage

$1 - Half a block of grated mozzarella cheese

Budget Meal w/Options

$8 Tacos

$6 - above ingredients

$1 - worth of sour cream or ranch dressing

$1 - worth of tomatoes or other vegetable 

Budget Meal w/Possibilites

$10 Tacos ($2.50 per person)

$8 above ingredients

$1.50 - worth of vegetables like corn, onions, jalapeno or green-yellow-orange peppers

$.50 - more cheese or extra seasoning

Directions:

Preheat oven to 250 degrees.

Place sausage on a microwave safe plate and thaw in microwave for approximately 1 minute (do not cook thru).

Remove from microwave and put thawed sausage in food processor or cut into small pieces (it does not need to be ground up completely or cut into super small pieces - but do cut a minimum of 10 pieces cut from each link).

Place in frying pan with 3 tablespoons of water on very low heat.

Grate cheese and place on a serving platter.

Move meat around in frying pan.

Cook corn in a separate pan if doing the $10 tacos.

Halve avocado and use a spoon to remove nut, then use the spoon to scoop the avocado out of the skin, cut into 8 pieces. Place on serving platter with cheese.

Move meet around and add 1 tablespoon of vegetable oil to brown.  Watch the meat closely, it cooks fast.  Turn the heat off if necessary until ready for seasoning.

Cut up lettuce and lime.  Lime should be halved*, skin removed from one half and cut into small pieces while the other whole-half is set aside.  Place cut up lime and lettuce on the serving platter with cheese and avocado.  *If you have two limes, cut 3 of the 4 sides into small pieces. 

Once the sausage is browned, add 1/4 cup of water and half to the entire package of taco seasoning depending on preference of taste. Simmer on low heat.

Put taco shells on a cookie sheet and warm for 3-5 minutes on 250 degrees.

Remove meat from heat once the water is reduced leaving seasoned meat only.

Cut up any other ingredients and dollop sour cream or other toppings of choice onto the serving platter with other items.

Squeeze whole lime half over any vegetable toppings on serving platter and place on table or island for each person to top their tacos.

Remove shells from oven and place on a separate platter to prepare to fill. 

Fill each of the 8-10 shells with meat (it doesn't take a lot of meat since there is a good quantity of toppings).  Many people overfill with meat which leaves less room for the toppings and makes it harder to eat.  So, fill the meat yourself and let your family complete them with toppings from the platter.

Serve each person two-three filled shells with a spoon to fill their individual tacos.  Enjoy!
